A Sicilian-style pizza, brought to Detroit in the 1940’s. The inventor of this pizza-style cooked the first pizzas in rectangle-shaped blue steel pan leftover from Detroit car factories originally used to hold oil and scrape metal. Lucky for us, they found a way to turn that deep pan into a vessel to create a focaccia like crust that is both light and airy on the inside while also chewy and crispy around the cheesy edge.
