The I.O.Shen whetstone can sharpen a wide variety of cutlery, from chef knives and slicing knives to butcher knives. Whichever you might have, make sure to sharpen them regularly to extend their longevity. To prevent your knives from dulling quickly, store them in a knife block, on a magnetic strip or with knife guard covers. Note: There are fixed standards for grit sizes based on a European standard and a Japanese standard. These are abbreviated to (F) or (J). The smaller the grit value, the coarser the stone. F 400 = J 1000 grit and F 1000 = J 3000 grit. Materials and Specifications: The I.O.Shen whetstone is made from Aluminum oxide. The coarse side has a F 120 grit yellow stone. The fine side has a F 400 grit brown stone.
